7UP Pound Cake 🍋
* 3 sticks butter, softened at room temperature
* 3 1/2 cups white sugar
* 5 eggs, at room temperature
* 3 1/4 cups all purpose flour
* 2 tbsp lemon juice
* 3/4 cup 7UP soda
Drizzle
* 1 cup powdered sugar
* 3-4 tbsp lemon juice
Bake Temperature: 325F
Bake Time: 1 hour and 10-15 minutes
1. Preheat oven to 325F.
2. Place your softened butter into your bowl or stand mixer bowl.
3. Add your white sugar.
4. Cream sugar and butter together for 3-5 minutes until smooth.
5. While mixing, add your eggs one by one.
6. Now add your lemon juice and 7UP soda. Mix until combined with batter.
7. Take your flour and sift into batter. You can skip this step but I highly recommend sifting for a smooth batter.
8. Mix your dry ingredient with your wet ingredients until fully incorporated.
9. Take your bundt pan and spray violently with a generous amount baking spray + add flour to ensure it does not stick.
10. I recommend using a scoop to portion out the cake batter to make sure its evenly spread throughout the pan.
11. Bang the pan on the counter once all the batter in it .. this will release any air bubbles hiding in batter.
12. Place in oven on 325F for 1 hour and 10-15 minutes.
13. After 1 hour and 10 minutes, take a knife or toothpick and stick inside. If it comes out clean then take out and let cool completely for 2 hours. If it does not come out clean then bake for 2-5 minutes.
14. Once cake is cooled, lets start making the lemon drizzle.
15. In a bowl, add powdered sugar and lemon juice. Mix. If you want the drizzle to be thinner.. add more lemon juice.
16. Place cake on a cake dish and drizzle it all on the cake.
17. Cut and enjoy this delicious 7UP pound cake that will make you think you are your grandma 🍋

If you've ever wondered what makes a pound cake truly stand out, let me tell you, it's often the little secrets! When I first heard about adding 7UP to a pound cake, I was skeptical. But after trying this 7UP Pound Cake recipe, I was absolutely blown away. It's not just a gimmick; the soda works magic, creating an unbelievably moist and tender crumb that's hard to achieve with just milk or water. The carbonation adds a subtle lift, making the cake lighter than a traditional pound cake, while the lemon-lime flavor of the 7UP perfectly complements the fresh lemon in the batter and drizzle. It’s truly a game-changer for anyone who loves a good lemon pound cake! Getting that perfect homemade dessert doesn't have to be intimidating, especially with a few baking tips up your sleeve. One thing I've learned is that room temperature ingredients are crucial for a smooth batter and even bake. Cold butter and eggs won't emulsify properly, leading to a denser cake. Another tip I swear by, which the recipe briefly mentions, is sifting the flour. Seriously, don't skip this! It breaks up any lumps and incorporates air, resulting in a much lighter and fluffier texture. As for preparing your bundt pan, don't be shy with the spray and flour. A well-greased and floured pan is your best friend against sticking. I even go a step further and use a pastry brush to ensure every nook and cranny is coated. And that trick about banging the pan on the counter? It's genius! It eliminates large air pockets that can create tunnels in your beautiful bundt cake. For those who love to experiment, this 7UP Pound Cake recipe is a fantastic base. While the lemon is absolutely divine, you could try substituting the lemon juice with orange juice for a 7UP Orange Pound Cake, or even adding a hint of almond extract to the batter for a different twist. A sprinkle of poppy seeds would also add a lovely texture and visual appeal. When it comes to the drizzle, don't be afraid to adjust the consistency. I like mine thick enough to cling to the cake but still runny enough to drip down the sides. If you want it extra zesty, a bit of lemon zest in the drizzle goes a long way. This cake is truly versatile and has become my go-to for potlucks, family gatherings, or just a sweet treat during the week. And when it comes to serving, this 7UP Lemon Pound Cake is wonderful on its own, but it also pairs beautifully with fresh berries, a dollop of whipped cream, or even a scoop of vanilla ice cream for a more indulgent experience. It's surprisingly refreshing, especially on a warm day. For storage, I find that keeping it tightly covered at room temperature keeps it fresh and moist for up to 3-4 days. If you're lucky enough to have leftovers beyond that, it freezes exceptionally well. Just wrap individual slices tightly in plastic wrap and then foil, and they'll be good for a month or two. Thaw at room temperature, and you'll have a delicious treat ready whenever a craving strikes! This easy recipe really takes the classic pound cake and elevates it with such a simple ingredient, turning it into something truly special and making everyone ask for the recipe! Trust me, once you try this moist cake, it'll be a staple in your kitchen too.
