Chicken Fried Rice

Ingredients:

- leftover white rice (cold works best)

- 1 - 2 cooked chicken breast, diced

- 1 tbsp olive oil (for cooking chicken)

- 1/2 tsp salt (for chicken)

- 1/4 tsp black pepper (for chicken)

- 1 tbsp rice vinegar

- 2 tbsp hoisin sauce

- 1 tsp sesame oil

- 1 cup frozen peas & carrots mix (thawed or microwaved)

- 2–3 tbsp soy sauce (adjust to taste)

Directions:

1. Heat a skillet over medium heat. Add olive oil, chicken, salt, and pepper. Cook until golden.

2. Add rice vinegar and toss for 30 seconds.

3. Stir in hoisin sauce and sesame oil; mix until chicken is coated.

4. Add rice, breaking up clumps. Stir-fry for 2–3 minutes.

5. Add peas & carrots, cook 1–2 minutes.

6. Drizzle with soy sauce, toss until everything’s coated and heated through.
