Cucumber Beef Bowl

Easy, fresh, and flavorful! Save this one for your next meal 😋

Ingredients

- 1 lb ground beef

- Salt, pepper, garlic powder, onion powder (or your fave seasoning)

- ½ cucumber, thinly sliced

- ¼ white onion, thinly sliced

- 2 green onions, chopped

- 1 carrot, ribboned or shredded - 2–3 tbsp mayo or plain yogurt

- Salt + black pepper, to taste

Instructions

1. Brown ground beef in a skillet over medium-high heat. Drain fat + season.

2. In a bowl, combine cucumber, onion, green onions, and carrot.

3. Mix mayo/yogurt with paprika, salt + pepper. Toss with veggies.

4. Build your bowl: rice, beef, slaw, guac.
