Snickerdoodle Peach 🍑 Cobbler

For the Filling:Tip- I replaced the crumb topping with snickerdoodle sugar cookies 🍪
6 cups fresh peaches, peeled, pitted, and sliced (or use canned peaches, drained)
1 cup granulated sugar
1/4 cup brown sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 teaspoon vanilla extract
For the Topping:
1 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, cold and cut into small pieces
1/2 cup milk
1/2 teaspoon vanilla extract
For Garnish (optional):
Vanilla ice cream or whipped cream
Directions:
Prepare the Peach Filling:
Mix Ingredients:
In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cornstarch, ground cinnamon, ground nutmeg, lemon juice, and vanilla extract. Toss until the peaches are well coated. Transfer the mixture to a 9x13-inch baking dish or a similar-sized oven-safe dish.
Prepare the Topping:
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
Cut in Butter:
Add the cold, cut-up butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
Add Wet Ingredients:
Stir in the milk and vanilla extract until just combined. The batter will be somewhat lumpy.
Assemble the Cobbler:
Top with Batter:
Spoon the batter over the peach filling in dollops, leaving some gaps for the filling to peek through.
Bake:
Bake in a preheated oven at 375°F (190°C) for 45-50 minutes, or until the topping is golden brown and the peach filling is bubbling.
