INGREDIENTS:

Baba Ghanoush

• 2 eggplants

• 4 tbsp tahini

• 4 tbsp olive oil

• Juice of ½ lemon

• 4 garlic cloves

• Salt to taste

Lamb Kofta

• 1 lb ground lamb

• 2 tbsp chopped parsley

• 4 garlic cloves

• 1 tsp garlic powder

• 1 tsp smoked paprika

• ½ tsp cinnamon

• 1 tsp cumin

• 1–2 tsp salt

Tzatziki

• 1 cup goat yogurt (or Greek/sheep yogurt)

• ½ cup chopped cucumber

• 1 tbsp lemon juice

• ½ tbsp olive oil

• 4 garlic cloves

• ½ tsp salt

• 2 tbsp chopped dill

• 1–2 tbsp chopped mint (optional)

RECIPE:

🍆 Baba Ghanoush

1. Preheat oven to 450°F

2. Slice eggplants lengthwise, drizzle with oil, sprinkle with salt

3. Roast 40 minutes until charred and deflated

4. Transfer to a bowl, cover, and steam 15 minutes

5. Scoop flesh from skins and roughly chop

6. Mash until smooth and creamy

7. Mix in:

• Tahini

• Lemon Juice

• Chopped Garlic

• Olive oil

• Salt to taste

🍖 Lamb Kofta

1. Add ground lamb to a bowl

2. Season with cumin, garlic, parsley, smoked paprika, cinnamon, salt & pepper

3. Mix well and form 10–14 meatballs

4. Heat oiled skillet over medium heat

5. Cook, turning every 4–5 minutes until evenly browned

6. Remove and rest

🥒 Tzatziki Sauce

1. In a bowl combine:

• Yogurt

• Chopped cucumber

• Garlic

• Lemon juice

• Olive oil

• Dill

• Mint (optional)

• Salt

2. Mix until smooth and creamy
