Some days my toddler eats good but most days he refuses to eat anything but snacks. I have a hard time only feeding him snack because I want him to eat nutritious foods. So I try to come up with alternatives to the foods I know he will eat.
He loves little Debbie’s mini muffins but I do t want him eating those because they are terrible for him so instead we tried chocolate black bean mini muffins and he loved them!
Ingredients:
1 1/2 cans Black Beans (rinsed off)
1/2 c maple syrup
1/2 c unsweetened coca powder (can use regular as well)
3 eggs
1/2 teaspoon baking soda
1 teaspoon baking powder
Splash of Vanilla (measure with your heart)
Chocolate Chips (I used dark chocolate but any will work)
Directions:
1. Pre heat oven to 350 degrees
2. Blend all ingredients in blender till incorporated.
3. Stir in chocolate chips (I used about 1/4 c you can use as much as you want)
4. Grease muffin pan and scoop into pan. (Optional add a few chocolate chips on top.)
5. Bake at 350 for 10 min (if using mini muffin pan) 20 min (if using g regular size muffin pan)
