6 Pasta Meal Ideas for Dinner

Here’s 6 pasta recipe ideas that I eat pretty often that are *relatively* healthy and easy to make. Almost all of these have extensive recipes on my page!

SLIDE 1: Marry Me Chicken Pasta (recipe on my page)

This one is my favorite! It’s got a long list of ingredients, but I think it’s still relatively easy to make

SLIDE 2: Kale pasta (recipe on my page)

This one is SO easy to make and only requires a few ingredients. I’d recommend it if you like pesto

SLIDE 3: Peanut & Chicken noodles

These would be excellent with really thick noodles. All I used was peanut butter, brown sugar, soy sauce, and some chili and pepper flakes.

SLIDE 4: Cottage Cheese Pasta (recipe on my page)

I love the viral feta pasta but wanted to make someone with even more protein. I threw in some chicken sausage too

SLIDE 5: Hawaiian Macaroni Salad (recipe on my page)

It’s better as a side, but I could still eat a whole bowl

SLIDE 6: Hummus Pasta (recipe on my page)

I love making this when I’m out of meat. All you need is hummus and noodles, and the rest is up to you!

... Read moreYou know how much I love finding easy and delicious pasta dishes for dinner, and my 6 go-to recipes are truly lifesavers! But sometimes, you just crave something a little more indulgent, a dish that feels like a warm hug. That’s exactly how I feel about creamy ricotta beef stuffed shells. I recently tried making these for a family gathering, and they were an absolute hit! It might sound a bit fancy, but trust me, it’s totally doable for a weeknight if you do a bit of prep. I remember seeing so many variations online, and I finally landed on a combination that worked perfectly for me. Here's a little rundown of how I make my ultimate creamy ricotta beef stuffed shells: First, you’ll need some jumbo pasta shells. Don't skimp on these; they're the perfect little pockets for all that delicious filling. For the meat, I usually go with lean ground beef, about a pound. You'll want to brown that in a skillet with some diced onion and garlic until it's cooked through and no longer pink. Drain off any excess grease, which keeps the dish from being too oily. Now for the star of the show: the creamy ricotta filling! In a big bowl, I mix a 15-ounce container of ricotta cheese (I always go for whole milk for that extra creaminess!), about half a cup of grated Parmesan cheese, and a beaten egg. The egg helps bind everything together. Then, I stir in some fresh chopped parsley, a pinch of nutmeg (it really elevates the flavor!), salt, and black pepper to taste. Once the beef mixture has cooled a bit, I fold that into the ricotta mixture. This is key – you want everything well combined. While you're preparing the filling, boil your jumbo pasta shells according to package directions, but make sure to cook them al dente – slightly firm. They’re going to bake further in the oven, so you don't want them getting mushy. Drain them and let them cool just enough so you can handle them without burning your fingers. Assembling is the fun part! Grab a 9x13 inch baking dish. I usually spread a thin layer of your favorite marinara sauce on the bottom of the dish – this prevents sticking and adds an extra layer of flavor. Then, carefully spoon the creamy ricotta beef mixture into each shell. Don't overfill them, but make sure they're generously stuffed. Arrange the stuffed shells in a single layer in your baking dish. Once all your shells are nestled in the dish, pour more marinara sauce over them. I sometimes mix a little heavy cream into my marinara for an even richer, creamier sauce, especially if I'm feeling extra decadent! Finally, sprinkle a generous amount of shredded mozzarella cheese and a little more Parmesan over the top. The cheese layer is what gets beautifully golden and bubbly in the oven. Bake the shells in a preheated oven at 375°F (190°C) for about 20-25 minutes, or until the cheese is melted, bubbly, and slightly browned. If you like a really golden top, you can pop it under the broiler for a minute or two, but watch it carefully so it doesn't burn! This dish is so comforting and satisfying. It’s perfect for a Sunday dinner or when you want to impress without too much hassle. I usually serve it with a simple side salad and some crusty garlic bread to soak up all that amazing sauce. The leftovers are fantastic too, if you're lucky enough to have any! So, while my quick pasta ideas are perfect for busy weeknights, don't shy away from trying these creamy ricotta beef stuffed shells when you have a bit more time. They're hearty, flavorful, and truly a crowd-pleaser. Happy cooking, pasta lovers!
