📝 Ingredients

For the chicken:

    •    1 cup low-fat buttermilk (or almond milk + 1 tbsp lemon juice)

    •    1 tsp garlic powder

    •    1 tsp onion powder

    •    ½ tsp smoked paprika

    •    ½ tsp cayenne pepper (optional)

    •    ½ tsp salt

    •    ½ tsp black pepper

For coating (lighter):

    •    ½ cup almond flour (or whole wheat flour)

    •    ½ cup panko breadcrumbs (whole wheat or gluten-free)

    •    1 tsp garlic powder

    •    ½ tsp paprika

    •    ¼ tsp salt

For healthier “BBQ-style” sauce:

    •    ½ cup no-salt-added tomato sauce

    •    2 tbsp apple cider vinegar

    •    1–2 tsp Mike’s Hot Honey (instead of tablespoons — for lighter sweetness/heat)

    •    ½ tsp smoked paprika

    •    ½ tsp garlic powder

    •    ½ tsp chili flakes (optional for spice)

    •    1 tsp olive oil (for richness, optional)

🔪 Instructions

    1.    Marinate chicken

    •    Combine buttermilk, garlic powder, onion powder, paprika, cayenne, salt, and pepper.

    •    Mix almond flour, panko, garlic powder, paprika, and salt in a shallow dish.
