Here’s a creamy, tangy macaroni salad recipe very simple, colorful, and full of flavor 👩🏽‍🍳

🥗 Creamy Macaroni Salad with Bell Peppers & Carrots

Servings: 4–6

🧂 Ingredients:

    •    2 cups Barilla elbow macaroni (or any short pasta)

    •    1 ½ tbsp unsalted butter

    •    ½ cup mayonnaise (adjust for creaminess)

    •    2 tbsp vinegar (white or apple cider)

    •    2 tsp granulated sugar

    •    2 tbsp sweet relish

    •    ½ cup finely diced bell peppers (mix red, yellow, and green if possible)

    •    ¼ cup grated or finely chopped carrot

    •    ½ tsp paprika

    •    ½ tsp black pepper

    •    Salt to taste

👩🏽‍🍳 Instructions:

    1.    Cook the pasta:

Bring a large pot of salted water to a boil. Add the Barilla macaroni and cook according to package directions until al dente.

Drain, rinse with cold water, and toss with the butter while still slightly warm (this keeps it from sticking and adds flavor).

    2.    Prepare the dressing:

In a mixing bowl, whisk together the mayonnaise, vinegar, sugar, and sweet relish until smooth and creamy.

    3.    Combine everything:

Add the cooled pasta, bell peppers, and carrot to the dressing. Toss well to coat evenly.

    4.    Season:

    5.    Chill & serve:
