Whenever I have any bananas that are “over-ripe” I ALWAYS revert back to this recipe! Once you make it your kids will be begging you for more!

Ingredients

• 3 ripe bananas, mashed

• ½ cup granulated sugar

• ¼ cup brown sugar

• ½ cup vegetable oil

• 2 large eggs

• 1 teaspoon vanilla extract

• 1½ cups all-purpose flour

• 1 teaspoon baking soda

• ½ teaspoon salt

• 1 teaspoon cinnamon

Directions:

-Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin pan. In a large bowl, mash the bananas until smooth. Add sugars, oil, eggs, and vanilla. Mix until combined.

- Add flour, baking soda, salt, and cinnamon. Gently fold just until incorporated. Do not overmix. Divide batter evenly into muffin cups, filling each about ¾ full.

- Bake for 18–22 minutes, or until a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
