dairy free protein banana muffins!🍌
I love a super quick + easy protein recipe especially when I have old bananas laying around! these muffins are very YUMMY & the perfect pre-workout snack!
ingredients:
🤍3 large extra ripe bananas
🤍1 large egg
🤍1/4 cup maple syrup or honey
🤍1 tablespoon olive or coconut oil
🤍1 teaspoon vanilla extract
🤍1 cup all purpose flour
🤍1/2 cup vanilla protein powder
🤍1 teaspoon baking soda
🤍1 teaspoon baking powder
🤍1/2 teaspoon salt
🤍2 teaspoons ground cinnamon
(chocolate chips are optional for topping)
instructions:
1). preheat oven to 425 degrees & grease tin
2). mash the bananas and fold in the egg
3). add the rest of the wet ingredients and mix
4). in a separate bowl combine the dry ingredients until thuroughly combined
5). slowly add dry ingredients to wet ingredients until fully combined
6). scoop batter into individual muffin cups and sprinkle with chocolate chips on top (OPTIONAL)
7). bake for 12-15 mins and serve warm!

This was a very delicious recipe! I would recommend either turning the heat down to just 400, or only keeping them in for 8 or 9 minutes. Mine were just a little bit burnt, but that could just be my stove. Overall, they are still very tasty!
