1½ cups mashed bananas (about 3 large ripe bananas)
6 tablespoons unsalted butter, melted
⅔ cup packed light or dark brown sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
2 tablespoons milk
Optional: 1 cup chopped walnuts, pecans, or chocolate chips
Steps:
Preheat your oven to 425°F (218°C). Line a 12-count muffin pan with liners or spray with nonstick spray.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, mash the bananas. Add melted butter, brown sugar, egg, vanilla extract, and milk; whisk until combined.
Pour the dry ingredients into the wet ingredients and mix until just combined. If using nuts or chocolate chips, fold them in now.
Divide the batter evenly among the muffin cups, filling them to the top.
Bake for 5 minutes at 425°F, then reduce the oven temperature to 350°F (177°C) and continue baking for 16–18 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
