🌸 Banana Nut Bread in Oatmeal Form 🌸
One of my favorite desserts growing up as a child was banana bread! I love the sweetness of banana as they have ripened and with the crunch with the nuts it’s a perfect flavor combo.
Ingredients:
• 1/4 cup of sugar
• splash of vanilla
• dash of cinnamon
• 1 cup of oats
• 1 3/4 cup milk
• 1/2 a banana
• 2 tablespoons of chopped walnuts
Directions:
- In a blender combine the banana and milk. Blend. In a saucepan on medium heat combine all the ingredients listed above including the banana milk. Give the mixture a good stir and cover. Cook this mixture for about 10 mins (check often) until the mixture has thickened up. Take the pan off the heat and enjoy! Top the oatmeal off with banana slices and chopped walnuts.
Transforming traditional banana bread flavors into a warm oatmeal is a fantastic way to enjoy a comforting breakfast that's both nutritious and delicious. Using ripe bananas enhances the natural sweetness, allowing you to reduce added sugar, and the chopped walnuts provide a satisfying crunch and healthy fats. In my experience, swapping regular rolled oats for quick oats—as suggested in the recipe—helps the oatmeal thicken more quickly, making it ideal for busy mornings. Also, blending the banana with milk before cooking infuses the entire dish with banana flavor, rather than just pieces, resulting in a creamy, smooth texture. Adding a dash of cinnamon and a splash of vanilla elevates the flavor profile, giving it that familiar banana nut bread aroma and taste. If you prefer a richer texture, you might consider using a plant-based milk like almond or oat milk, which pairs perfectly with the nutty elements. One tip I found helpful is to monitor the oatmeal closely as it cooks on medium heat—stirring frequently prevents sticking and ensures even thickening. Once cooked, topping the oatmeal with extra banana slices and walnuts adds visual appeal and an extra punch of flavor and texture. This recipe fits well into a wholesome breakfast routine, providing fiber from oats, potassium from bananas, and omega-3 fats from walnuts. It’s a versatile dish that can be customized by adding other mix-ins like chia seeds, flaxseeds, or a drizzle of honey for extra sweetness. Overall, this banana nut oatmeal is a wonderful alternative to traditional banana bread—giving all the beloved flavors in a quicker, heartier, and healthier format that fuels your day.
