Ingredients:

For the Wraps:

• 2 large spinach or whole wheat wraps

• 1 cup mixed greens (arugula, spinach, romaine)

• ½ avocado, sliced

• ½ cup shredded carrots

• ¼ cup sliced cucumber

• ¼ cup red cabbage, shredded

• Optional: grilled tofu or chicken strips

For the Yogurt Herb Sauce:

• ½ cup plain Greek yogurt

• 1 tbsp lemon juice

• 1 tbsp chopped fresh dill or parsley

• 1 tsp olive oil

• Salt & pepper to taste

1. In a small bowl, mix yogurt, lemon juice, herbs, olive oil, salt, and pepper until smooth.

2. Lay out wraps and spread a spoonful of sauce on each.

3. Layer greens, avocado, carrots, cucumber, and cabbage. Add protein if using.

4. Drizzle with more sauce, then roll tightly into wraps.

5. Slice in half and serve fresh or chilled.
