🧑🍳 Grilled Salmon with Roasted Cauliflower & Mixed Greens
Ingredients:
• 1 wild-caught salmon fillet
• 1 cup cauliflower florets
• 1 tbsp avocado oil (for roasting)
• Sea salt & black pepper to taste
• 1 cup mixed greens (arugula, spinach, romaine, etc.)
• 1 tsp balsamic vinegar or lemon juice (for dressing)
Instructions:
1. Preheat oven to 425°F (220°C).
2. Toss cauliflower florets with avocado oil, sea salt, and pepper. Roast on a baking sheet for 20–25 minutes or until golden brown.
3. Season the salmon with sea salt and black pepper. Grill over medium heat for 4–5 minutes per side until fully cooked and flaky.
4. Serve salmon with roasted cauliflower and a fresh bed of mixed greens. Drizzle with balsamic vinegar or lemon juice.
