⸻
Instructions
1. Lightly grease or line small baking tins or silicone moulds.
2. Mix dry ingredients:
In a bowl, combine oat flour, protein powder, cinnamon, and baking powder.
3. Add wet ingredients:
Stir in Skyr yogurt, egg, vanilla extract, and sweetener.
Mix until smooth and thick — it should be spoonable, not runny.
4. Fill tins:
Spoon the mixture evenly into your prepared tins.
5. Make the cinnamon swirl:
In a small bowl, mix cinnamon, sweetener, and a touch of hot water until syrupy.
Drizzle or swirl over the tops of the batter.
6. Bake:
Bake until the tops are firm and a toothpick comes out clean.
7. Make the whey drip:
Mix 5 g protein powder with a few drops of water until it becomes a thick icing-like glaze.
8. Serve:
Let the cakes cool slightly, then drizzle the whey over the top.
