Baked meatballs are a comforting dish that combine the juicy texture of ground beef with the subtle fluffiness of rice, creating a satisfying meal that’s both hearty and flavorful. Including rice in the meatball mixture helps keep them tender and adds a unique texture that sets this recipe apart from traditional meatballs made with breadcrumbs alone. The tomato paste diluted with water forms a rich, tangy sauce that not only cooks the meatballs but also infuses them with robust flavor. Baking the meatballs in this sauce allows the flavors to meld beautifully while keeping the meat moist. When adding the cheese towards the last 10 minutes of baking, it melts into a golden, bubbly topping that adds creaminess and a delightful cheesy aroma. The use of fresh parsley at the end adds a fresh, herbal contrast to the richness of the dish and also enhances its visual appeal. This recipe is versatile—feel free to adjust the seasoning with your favorite herbs such as oregano, basil, or thyme to suit your taste. For a healthier twist, you might consider using lean ground beef or substituting some of the meat for ground turkey. Additionally, serving these baked meatballs over pasta, alongside roasted vegetables, or with crusty bread can make for a complete and satisfying meal. Remember, oven temperatures can vary, so it’s important to check that your meatballs reach a safe internal temperature of 160°F (71°C) to ensure they are fully cooked. This simple yet delicious baked meatballs recipe is ideal for busy weeknights and can also be made ahead and reheated, making it convenient without sacrificing flavor or quality.
