RECIPE

Ingredients:

2 cups all-purpose flour

1/3 cup sugar

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/2 cup frozen unsalted butter (grated)

1/3 cup plain Greek yogurt

1/3 cup heavy cream

1 large egg

1 tsp vanilla extract

1 cup blueberries (fresh or frozen)

Glaze:

1 cup powdered sugar

1-2 Tbsp milk

Instructions:

Preheat oven to 400°F. Line a baking sheet with parchment.

Mix flour, sugar, baking powder, baking soda, and salt in a large bowl.

Grate in the frozen butter and cut it into the flour with a fork or pastry cutter.

In a separate bowl, whisk together yogurt, cream, egg, and vanilla.

Add wet ingredients and blueberries to the dry. Fold together until mostly combined.

Gently knead in the bowl a few times until it forms a shaggy dough.

Turn dough out onto a floured surface. Pat into an 8-inch circle. Cut into 8 wedges.

Transfer to baking sheet and bake for 16-18 minutes or until golden.

Cool 10 minutes.

Whisk glaze ingredients until smooth and drizzle over scones.
