Baked enchiladas are a delightful way to enjoy a classic dish with a twist. This recipe offers a unique blend of flavors, featuring ground beef and a medley of bell peppers. The addition of tater tots not only adds a fun texture but also enhances the heartiness of the meal. For a healthier twist, consider using whole-wheat tortillas or incorporating black beans, which are rich in fiber and protein. When preparing your baked enchiladas, feel free to customize the seasoning to suit your taste. Common spices include cumin, paprika, and garlic powder, which complement the rich flavors of the meat and vegetables beautifully. For a spicier kick, you can add jalapeños or your favorite hot sauce. Baking the enchiladas at 375°F for 30-40 minutes allows the flavors to meld while the cheese gets beautifully melted and golden. Serve your enchiladas with fresh toppings like chopped cilantro, diced avocados, or a dollop of sour cream for added flavor and creaminess. This dish not only satisfies the palate but is also visually pleasing with its vibrant colors and textures. Baked sheet enchiladas are perfect for meal prep and can be stored in the refrigerator for a few days or frozen for later use.
