I used to be intimidated, but after some practice, I've got my routine down and I'm excited to share it! First, cleaning oxtails is essential. You'll often find bone fragments or excess fat. My process begins with a good rinse under cold running water, scrubbing each piece to remove impurities. Then, for that extra clean feeling, I always do a vinegar soak. Many ask, "how long to soak oxtails in vinegar?". I find soaking them in cold water with about 1/4 cup of white vinegar for 30 minutes to an hour really helps draw out lingering blood. After the soak, I rinse thoroughly and pat dry. Don't skip drying – it helps with browning! I trim large pieces of excess fat but leave some; it renders beautifully and adds flavor. This is truly the best way to clean oxtails for a delicious outcome. Next comes the magic: marinating oxtails. This infuses tough cuts with incredible flavor and aids tenderizing. For my go-to oxtail marinade, I combine minced garlic, ginger, chopped onions, fresh thyme, allspice berries, a dash of hot sauce, soy sauce, Worcestershire, and a little brown sugar for balance. I also add lime juice or apple cider vinegar; the acidity helps break down meat fibers. I generously rub this marinade all over each piece of ox tail, ensuring every crevice is covered. A common question is, "how long to marinate oxtails?". While a few hours work, I highly recommend marinating oxtails overnight. This extended period allows flavors to penetrate deep, resulting in a much richer, more succulent dish. I place them in a large Ziploc bag or covered dish in the fridge for 12-24 hours. Yes, you can marinate oxtails overnight, and I promise, it makes all the difference for melt-in-your-mouth tenderness! Once your oxtails are perfectly cleaned and marinated, you’re well on your way to an amazing oxtail recipe. While this article focuses on the initial Clean & marinade steps, the next phase is just as important. I usually start by browning the oxtails in a hot pot to seal juices and develop a rich crust. Then, I deglaze and add liquid (broth, water, sometimes beer) with more aromatics and veggies – like the diced some veggies I often prepare.
