Ingredients:

4 large poblano peppers (or green chiles)
1 cup cooked ground beef, shredded chicken, or chorizo (optional for extra protein)

3 large eggs
½ cup heavy cream

Instructions:
Prep the peppers:
Roast poblano peppers under the broiler or over an open flame until the skin blisters and blackens.
Place in a bowl, cover with foil or a towel for 10 minutes, then peel off the charred skin.
Slice each pepper open, remove seeds, and lay them flat.
Make the filling:
In a bowl, mix together your meat (if using), half of the shredded cheese, and a dash of salt and pepper.
Assemble the casserole:
Grease a small baking dish with butter or oil.
Layer the roasted peppers on the bottom, then add the filling mixture, and top with another layer of peppers.
Prepare the egg mixture:
In another bowl, whisk eggs, heavy cream, cream cheese, garlic powder, and cumin until smooth.
Pour over the pepper layers.
Sprinkle the remaining cheese on top.
Bake:
Bake uncovered at 375°F (190°C) for 25–30 minutes, until golden and bubbly.
Let it cool slightly so the sauce thickens.
Serve:
Plate a generous portion, top with fresh avocado slices, and sprinkle with black pepper or cilantro if desired.
