Chicken Alfredo
Ingredients:
-2 large chicken breasts
-12 oz fettuccine
-2 tbsp olive oil
-3 tbsp butter
-3–4 cloves garlic (minced)
-1 ½ cups heavy cream
-1 cup freshly grated Parmesan cheese
-½ tsp salt
-½ tsp black pepper
-½ tsp Italian seasoning
1. Cook pasta
•Boil salted water.
•Cook pasta according to package directions.
•Reserve ½ cup pasta water before draining.
2. Cook Chicken (2 ways)
//First way
•Slice chicken breasts in half lengthwise (for thinner pieces).
•Season both sides with salt, pepper, and Italian seasoning.
•Heat olive oil in a skillet over medium heat.
•Cook chicken 5–7 minutes per side until golden and cooked through
•Remove and let rest
//Second way
•1–2 chicken breasts (cut into 1-inch cubes)
•1–2 tbsp olive oil or butter
•½ tsp salt
•½ tsp pepper
•½ tsp garlic powder
•½ tsp paprika (optional for color)
Place cubed chicken in a bowl and season with salt, pepper, garlic powder, paprika.
Toss to coat evenly.
•Heat oil in a large skillet over medium heat.
•Make sure the pan is hot before adding chicken (this helps it brown).
•Add chicken cubes in one layer.
•Don’t overcrowd (cook in batches if needed).
•Let them cook 2–3 minutes without stirring to get a golden sear.
•Stir and continue cooking another 3–5 minutes.
•Total cook time: about 6–8 minutes.
•Chicken is done when:
•No pink inside
•Internal temp reaches 165°F
3. Alfredo Sauce
•In the same pan, reduce heat to medium-low.
•Add butter and minced garlic. Cook 30–60 seconds (don’t brown it).
•Pour in heavy cream. Simmer gently 3–5 minutes.
•Stir in Parmesan cheese slowly until melted and smooth.
•If too thick, add a little reserved pasta water.
4. Combine
•Add drained pasta to the sauce and toss.
•Add sliced or cubed chicken on top or mix it in.
•Garnish with parsley and extra Parmesan
