Better-Than-Panera Broccoli Cheese Soup 🧀🔥

If you’re obsessed with Panera’s Broccoli Cheese Soup… this homemade version is even BETTER. Creamy, cheesy, loaded with veggies, and so comforting—it’s the ultimate cozy bowl!

📌 SAVE THIS because you’ll want to make it again & again!

🔥 What You Need:

🥦 3 cups low-sodium vegetable broth

🥕 1 cup grated carrot (about 1-2 carrots)

🌿 1 cup finely diced celery (about 2 ribs)

🥔 2 small/medium potatoes, grated (Yukon Gold or Russet)

🥦 4 ½ cups chopped broccoli (about 3 small heads)

🧅 1 medium yellow onion, finely chopped (about 1 cup)

🧈 5 Tbsp butter, divided

🌾 ¼ cup all-purpose flour

🥛 2 cups half and half (fat-free works too!)

🥛 1 ½ cups whole milk

🧂 Salt & pepper to taste

🧀 3 cups shredded sharp cheddar cheese

🔥 How to Make It:

1️⃣ Simmer: Add broth, carrots, celery, and potatoes to a pot. Bring to a boil, reduce heat, and simmer 3-5 min. Add chopped broccoli and cook another 1-2 min. Remove from heat.

2️⃣ Sauté: In a skillet, cook onion in 1 Tbsp butter until tender. Add to soup.

3️⃣ Make Roux: In the same skillet, melt 4 Tbsp butter. Whisk in flour and cook 1-2 min until golden. Slowly whisk in half & half and milk until smooth and bubbly.

4️⃣ Combine: Add roux to the soup, stir, and cook for 2 min. Remove from heat and stir in shredded cheese. Season to taste!
