Better Than Store-Bought Biscoff Cookies!

These cookies are crispy and dangerously delicious! They are so good, you’ll want to hide the last one (but we won’t judge if you don’t)! 🍪

✨ What You Need:

✔️ 1 cup unsalted butter (room temp)

✔️ 1 1/2 cup light brown sugar

✔️ 1/2 cup granulated sugar

✔️ 14 oz container lotus cookie butter, divided

✔️ 2 large eggs, room temperature

✔️ 1 egg yolk

✔️ 2 tsp vanilla extract

✔️3 cups all-purpose flour

✔️ 1 tsp baking soda

✔️ 1 tsp baking powder

✔️ 1 tsp kosher salt

✔️ 11 oz bag white chocolate chips

Topping (optional):

✔️ 10 Biscoff cookies, crushed

✔️ 1/2 cup vanilla melted wafers, or chopped almond bark, melted, for drizzle (optional)

👀 How to Make It:

1️⃣ Cream butter & sugars, 1 cup cookie butter, until light and fluffy, then mix in eggs and vanilla.

2️⃣With remaining 1/2 cup cookie butter, scoop into 24 small balls; about 1 tsp each, and put them into the freezer.

3️⃣ Add dry ingredients & combine. Mix in 1 1/2 cups white chocolate chips.

4️⃣ Scoop dough into 24 balls, or 70 grams, and chill.

5️⃣Remove balls from the fridge, add indentation into the center of each cookie dough, and add cold balls of cookie butter, to the center. Seal to close, and roll back into a ball. Top each with extra white chocolate chips.

6️⃣Bake at 375°F for 12-15 min.

7️⃣Optional: You can melt the vanilla melting wafers and drizzle over cookies, top with biscoff cookie crumbs.
