For the cake 🍰
✔️ 2 cups all-purpose flour
✔️ 1 1/2 cups granulated sugar
✔️ 1/2 cup light brown sugar, packed
✔️ 3/4 cup unsweetened cocoa powder
✔️ 2 tsp baking powder
✔️ 1 1/2 tsp baking soda
✔️ 3/4 tsp salt
✔️ 3/4 cup canola or vegetable oil
✔️ 2 eggs
✔️ 1 tsp vanilla extract
✔️ 6 Tbsp milk
✔️ 1/3 cup sour cream
✔️ 1 cup boiling water
For the topping ✨
✔️ 1 (10.5-ounce) package mini marshmallows
For the frosting 🍫
✔️ 1/2 cup butter
✔️ 6 Tbsp milk
✔️ 3 heaping Tbsp unsweetened cocoa powder
✔️ 1 tsp vanilla extract
✔️ 3 cups powdered sugar
Instructions:
1️⃣ Preheat oven to 350°F and lightly grease a 9x13-inch baking pan.
2️⃣ In a large bowl, combine 2 cups flour, 1 1/2 cups granulated sugar, 1/2 cup brown sugar, 3/4 cup cocoa powder, 2 tsp baking powder, 1 1/2 tsp baking soda, and 3/4 tsp salt.
3️⃣ Add 3/4 cup oil, 2 eggs, 1 tsp vanilla, 6 Tbsp milk, and 1/3 cup sour cream. Mix until combined.
4️⃣ Reduce speed and carefully pour in 1 cup boiling water. Beat on high speed for 1 minute.
5️⃣ Pour batter into prepared pan.
6️⃣ Bake for 38–45 minutes, or until a toothpick inserted in the center comes out clean.
7️⃣ Remove cake from oven and sprinkle mini marshmallows all over the top, covering it completely.
8️⃣ Return to the oven for 3–5 minutes, until marshmallows are slightly puffed and melted.
9️⃣ Let cake cool completely before adding the frosting.
For the frosting:
🔟 Melt 1/2 cup butter in a small saucepan over medium-high heat.
