Shrimp Lo-Mein 🍜

Got this recipe from Toni Chapman on TikTok and added my own twist to it.

Ingredients:

- 1 lb shrimp, peeled and deveined

- 1/4 cup soy sauce

- 1/4 cup oyster sauce

- 2 tbsp sesame oil

- 1 tbsp cornstarch

- 2 cloves garlic, minced

- 1 inch piece of ginger, grated

- 1 onion, sliced

- 1 bell pepper, sliced

- 1 cup shredded cabbage

- 1 cup of broccoli

- 1 cup shredded carrots

- 1 package spaghetti noodles, cooked according to package instructions

- Salt and pepper, to taste

- Green onions and sesame seeds, for garnish

Instructions:

1. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and cornstarch. Set aside.

2. In a large skillet or wok, heat some oil over medium-high heat. Add the garlic and ginger and cook for about 1 minute until fragrant.

3. Add the shrimp and cook until pink and cooked through, about 4-5 minutes. Remove the shrimp from the skillet and set aside.

4. In the same skillet, add more oil if needed and sauté the onion, bell pepper, broccoli, cabbage and carrots until they are tender-crisp.

5. Return the shrimp to the skillet and add the cooked noodles.

6. Pour the sauce over the shrimp and vegetable mixture and toss to coat everything evenly. Cook for an additional 2-3 minutes until heated through.

7. Season with salt and pepper to taste.

8. Serve hot, garnished with green onions and sesame seeds.

When I want to swap out the shrimp for beef, my go-to cut is usually flank steak or sirloin. They slice beautifully against the grain and cook up quickly, staying tender. The key really is in the preparation. First, I slice about a pound of beef very thinly, against the grain. This makes a huge difference in tenderness. Then, I give it a quick marinade. My secret? A tablespoon of soy sauce, a teaspoon of cornstarch, a dash of sesame oil, and sometimes, a tiny pinch of baking soda—this tenderizes the beef like magic! Let it sit for at least 15-20 minutes while you prep your veggies; it makes a world of difference in the final texture and flavor. Now, for the cooking part. Instead of cooking the shrimp first, I'll sear the marinated beef. Heat a bit more oil in your skillet or wok over medium-high heat until it’s smoking. Add the beef in a single layer – don't overcrowd the pan, or it'll steam instead of sear! Cook for just 1-2 minutes per side until beautifully browned. You want it cooked through but still tender. Once done, remove it from the skillet and set it aside, just like you would the shrimp. This ensures your beef stays perfectly juicy and doesn't get tough from overcooking. After the beef is out, you can proceed with sautéing your onions, bell peppers, broccoli, cabbage, and carrots exactly as the original recipe describes. If you like a bit more heat, a pinch of red pepper flakes with the garlic and ginger can really elevate the flavor! Once your veggies are tender-crisp, that's when the magic happens! Return the seared beef to the skillet along with your cooked spaghetti noodles. Pour over that incredible sauce mixture of soy sauce, oyster sauce, sesame oil, and cornstarch.
