🇯🇲 Jamaican Stew Peas with Pigtails & Smoked Turkey Necks ❤️
Made a pot of Jamaican stew peas with pigtails & smoked turkey necks. A little taste of home and a nod to my Jamaicans, y’all know this kind of comfort hits different.
Ingredients
* 1 lb salted pigtails
* 1–1½ lbs smoked turkey necks
* 2 cups dried red kidney beans
* 8 cups water
* 1 can coconut milk
* 3 cloves garlic, minced
* 1 medium onion, chopped
* 3 scallions, chopped
* 1 sprig fresh thyme
* 1 whole Scotch bonnet pepper
* 1 tsp black pepper
* 1 tsp all-purpose seasoning
* 1 tsp paprika
* Salt to taste
For the Spinners (optional, I don’t like it so I didn’t put it)
* 1 cup flour
* Pinch of salt
* Water as needed
Instructions
1. Wash pigtails with vinegar or lime. Boil 15 minutes, drain, then repeat once more to remove excess salt.
2. Soak kidney beans overnight if possible. Add beans and water to a large pot and boil until tender (about 1–1½ hours).
3. Add pigtails and smoked turkey necks. Cook until meat is tender.
4. Add onion, garlic, scallions, thyme, black pepper, paprika, and all-purpose seasoning. Stir well.
5. Pour in coconut milk and simmer 20–30 minutes.
6. Mix flour, salt, and water into a firm dough. Roll into skinny “spinners.”
7. Drop spinners and whole Scotch bonnet pepper into the pot. Simmer 15 more minutes until gravy thickens.
8. Taste, adjust seasoning if needed, and serve hot.
✨ Tip: Don’t burst the Scotch bonnet unless you want it EXTRA spicy.
