#holidayeats #lemon8challenge #christmas #christmasrecipes #lemon8creator

We’re doing a series where everyday in December I will be showing you the best desserts that you will want to make for your family for the holidays! Make sure to save this post for the recipe

✨ Ingredients

For the cream cheese filling

• 8 oz cream cheese, softened

• ⅓ cup granulated sugar

• 2 tsp vanilla extract

• 1 tbsp all-purpose flour

For the pastry

• 1 sheet puff pastry, thawed

• 1 egg (for egg wash)

• 1 tbsp water

For the glaze

• ¼ cup light corn syrup or ¼ cup simple syrup

🧁 Instructions

1. Make the Cream Cheese Filling

•In a bowl, beat the cream cheese and sugar until smooth and fluffy. Add vanilla extract and flour, mixing until fully combined. Taste and adjust sweetness or vanilla if needed. Set aside while preparing the puff pastry.

2. Prepare the Puff Pastry

•Preheat your oven to 400°F (204°C). Lightly flour your work surface. Unfold the puff pastry sheet and roll it out just slightly to even the surface. Cut the sheet into 12 equal rectangles.

3. Fill and Shape the Quesitos

•Place about 1 tablespoon of cream cheese filling in the center of each rectangle. Roll each pastry diagonally, like a cigar, or fold the corners inward to wrap the filling. Pinch the ends slightly to prevent leaking.

4. Brush With Egg Wash

•Whisk the egg + 1 tbsp water. Brush each quesito generously for that golden bakery shine.

5. Bake

•Bake on a parchment-lined tray for 18–22 minutes, or until:

✔ golden

✔ puffed

✔ crisp

6. Glaze for That Authentic Shine

•Once they come out of the oven: While still warm, brush each quesito with light corn syrup or simple syrup. Let it set until glossy.

... Read moreThere's something truly magical about Puerto Rican desserts, and quesitos are absolutely at the top of my list! I remember the first time I tasted a freshly baked quesito in Puerto Rico – that perfect combination of flaky, golden pastry and a rich, sweet cream cheese filling was unforgettable. It's a treat that captures the heart of island baking, and I'm so excited for you to experience that joy in your own kitchen. While the recipe above gives you all the steps you need, let me share a few extra tips and insights I've gathered over time to make your homemade quesitos truly shine. First, don't be intimidated by puff pastry! It's your best friend for achieving that signature flakiness. Just make sure it's properly thawed but still cold enough to handle without getting sticky. If it starts to warm up, pop it back in the fridge for a few minutes. The heart of any good quesito is its cream cheese filling. Many traditional recipes use a slightly tangy cream cheese, balanced with sugar and a hint of vanilla. Some home bakers, myself included, love to experiment. If you're feeling adventurous, a tiny dash of lemon zest can really brighten up the filling, or you could even swirl in a tablespoon of guava paste for a classic Puerto Rican flavor combination – guava and cheese are a match made in heaven! Just make sure not to overfill your pastries, as this can cause the filling to leak out during baking. Another secret to those beautifully golden and crisp Puerto Rican Quesitos is the egg wash. Don't skimp on it! A generous coating gives them that gorgeous bakery-quality sheen. And when they come out of the oven, brushing them with corn syrup or simple syrup while they're still warm is crucial for that authentic glossy finish. It not only looks professional but also adds a lovely subtle sweetness and keeps them from drying out. These cheese pastries aren't just for breakfast or brunch; they make a fantastic dessert or snack any time of day. During the holidays, they become an absolute centerpiece. Imagine serving a platter of warm, glistening quesitos to friends and family – they're always a huge hit! They embody the festive spirit of Puerto Rican desserts and are surprisingly easy to whip up, making them perfect for busy holiday preparations. Beyond the traditional cream cheese, I’ve seen variations with coconut, or even a mix of cream cheese and ricotta for a slightly different texture. While the classic quesito puerto rico pastry is usually plain cream cheese, don't be afraid to make it your own! What I love most about baking is the ability to adapt and personalize. So, embrace the process, enjoy the aroma filling your kitchen, and get ready to indulge in these incredible Puerto Rican treats. You'll be making these flaky, sweet, and utterly delightful Quesitos again and again, I guarantee it!
