Homemade Zoupa
1 lb spicy Italian sausage
1/2 white onion
2 cloves of minced garlic
8 cups low sodium chicken broth
5 large russet potatoes
1 cup heavy cream
1/2 bunch of fresh kale
I use my Dutch oven. Brown sausage and sauté onion. Add garlic. Drain any grease.
Add chicken broth. Peel and cut potatoes. Bring to a boil. Then I add heavy cream and kale. I let this simmer on low for 10 minutes until kale is soft.
