My super simple go-to meals for when it’s just too hot outside to cook a real meal
What you need:
1 chicken breast
1 cup of couscous
1 small cucumber
1 carrot or approx 6-8 baby carrots
1 small bell pepper (any color! I like yellow most)
1 small shallot or red onion
1 bottle of Greek Vinegrette Dressing
The Chicken!
Get yourself a bottle of Greek vinaigrette dressing! Use about half the bottle to marinade your chicken (I like dump it in a bag and let it sit in the fridge all day until I’m ready to cook it)
Heat your pan and use a few drops of oil to pan sear the chicken until it’s cooked through and golden on each side!
Let it cool then shred it and set it aside
Cook the CousCous
to package instructions :) I use a box from Aldi that comes with a seasoning packet inside. The seasonings are: Garlic powder, Onion Powder, Salt and Black Pepper
Set couscous aside to cool!
Chop all your vegetables into bite sized pieces and toss them in a bowl with 2 tbsp of Greek Vinaigrette
Combine Chicken, CousCous and Vegetables together! You can eat while it’s warm or set in the fridge to let it chill for about 1 hour!
