Blondies à la banane et aux pépites de chocolat
sans gluten | sans sucre raffiné

Je suis une fan finie de blondies. Encore plus que des brownies.
Il y a quelque chose dans cette saveur riche et cette texture caramélisée qui me fait craquer. Alors un beau matin, quand j’ai vu une banane bien mûre traîner sur le comptoir, je me suis dit — pourquoi ne pas en faire un blondie à la banane? Et honnêtement… le résultat est majestueux. La texture est fondante, le goût est juste assez sucré, et les pépites de chocolat viennent tout lier ensemble.

Ingrédients
1 banane bien mûre, écrasée (environ ½ tasse / 120 g)
¾ tasse (180 g) de beurre d’amande (texture bien liquide)
¾ tasse (120 g) de sucre de coco
1 œuf + 1 jaune d’œuf
2 c. à thé (10 ml) d’extrait de vanille
½ c. à thé (2,5 ml) de bicarbonate de soude
½ tasse (50 g) de farine d’amande très fine
½ tasse (65 g) de farine tout usage sans gluten
1 pincée de sel
70 g de pépites de chocolat noir sans sucre raffiné (ou au goût)
(tranches de banane pour garnir, optionnel)

Instructions
Dans un grand bol, mélanger la banane écrasée, le beurre d’amande, le sucre de coco, les œufs, la vanille et le sel jusqu’à consistance lisse.
Ajouter les farines et le bicarbonate de soude, et mélanger jusqu’à ce que le tout soit bien incorporé.
Incorporer les pépites de chocolat.
Couvrir et réfrigérer la pâte pendant 30 minutes pour une texture optimale.
Verser la pâte dans un moule carré de 20 cm (8 pouces) tapissé de papier parchemin.
Garnir de tranches de banane si désiré.
Cuire au four à 175 °C (350 °F) pendant 28 à 30 minutes, ou jusqu’à ce que le dessus soit doré et bien pris.
Laisser refroidir complètement avant de couper.
