donne 6 cupcakes

ingrédients

cupcakes aux dattes

½ tasse de dattes medjool, dénoyautées et hachées (80 g)

½ tasse d’eau chaude (120 ml)

¾ c. à thé de bicarbonate de soude

¼ tasse de beurre non salé, ramolli (57 g)

¼ tasse de sirop d’érable (60 ml)

1 gros œuf

1 c. à thé d’extrait de vanille

⅔ tasse de farine tout usage (85 g)

¾ c. à thé de poudre à pâte

½ c. à thé de cannelle moulue

⅛ c. à thé de sel de mer fin

sauce toffee à l’érable

¼ tasse de beurre non salé (57 g)

¼ tasse de sirop d’érable (60 ml)

¼ tasse de crème 35 % (ou crème de coco pleine teneur en gras) (60 ml)

½ c. à thé d’extrait de vanille

¼ c. à thé de sel de mer fin

préparation

préchauffer le four à 350 °f (180 °c). tapisser un moule à muffins de 6 cavités de caissettes en papier.

déposer les dattes hachées dans un bol résistant à la chaleur. verser l’eau chaude par-dessus et ajouter le bicarbonate de soude. laisser reposer 10 à 15 minutes, puis écraser à la fourchette ou mixer brièvement jusqu’à obtenir une texture presque lisse.

dans un bol moyen, crémer le beurre et le sirop d’érable jusqu’à ce que le mélange soit pâle et léger. ajouter l’œuf et bien mélanger, puis incorporer la vanille.

dans un autre bol, mélanger la farine, la poudre à pâte, la cannelle et le sel. incorporer les ingrédients secs au mélange humide, juste assez pour combiner.

ajouter délicatement le mélange de dattes et mélanger jusqu’à ce qu’il soit bien intégré.

répartir la pâte également dans les 6 cavités, presque jusqu’au bord.

cuire de 18 à 22 minutes, jusqu’à ce que le dessus des cupcakes reprenne sa forme au toucher.

pendant la cuisson, préparer la sauce. dans une petite casserole à feu moyen, faire fondre le beurre avec le sirop d’érable. porter à léger frémissement pendant 2 à 3 minutes. ajouter la crème, la vanille et le sel, puis laisser mijoter encore 2 à 3 minutes, jusqu’à ce que la sauce soit brillante et légèrement épaissie.

à la sortie du four, laisser tiédir les cupcakes 2 à 3 minutes. piquer plusieurs trous dans chaque cupcake à l’aide d’un cure-dent ou d’une fourchette. napper généreusement de sauce chaude et laisser imbiber.

servir tiède, avec un peu plus de sauce et, si désiré, de la crème fouettée ou de la crème glacée à la vanille. #pourtoi #recettehealthy #pourtoii
