fennel salad
ingredients
1 fennel bulb, very thinly sliced (a mandolin works best)
2 mini cucumbers, very thinly sliced (a mandolin works best)
1/2 (80 g) avocado
1/2 cup (50 g) freshly grated parmesan, plus more to taste 3 tbsp (26 g) pumpkin seeds
1/3 cup (50 g) sauerkraut lots of fresh dill
optional: micro greens
for the dressing
2 tbsp (30 ml) olive oil
3 tbsp (45 g) @Liberté Canada Greek
juice of 1 lemon
zest of 1/2 lemon
salt and freshly ground black pepper, to taste
instructions
very thinly slice the fennel and cucumber using a mandolin or a sharp knife. place in a bowl.
add the avocado, parmesan, pumpkin seeds, sauerkraut, dill and optional micro greens. in a small bowl, whisk together the olive oil, greek yogurt, lemon juice, lemon zest, salt and pepper until smooth and creamy (or add everything over the salad directly for even less dishes) ;).
pour the dressing over the fennel and toss well to coat. let sit for 5–10 minutes before serving so the fennel softens slightly and absorbs the dressing.
