Garlic butter cajun chicken bowtie pasta
1. Cook pasta (normal, but don’t mess this up)
• Boil salted water
• Cook bow tie pasta
• SAVE 1 cup pasta water (important!!)
• Drain
2. Season & cook the chicken
In a bowl:
• Chicken pieces
• 1 tbsp Cajun seasoning
• 1 tsp garlic powder
• ½ tsp onion powder
• ¼ tsp black pepper
• Pinch of salt
• Heat olive oil + 2 tbsp butter (medium-high)
• Add chicken → DO NOT TOUCH for 2–3 mins (this gives that golden crust)
• Flip, cook until done
Now the magic:
• Lower heat
• Add 1 tbsp butter + tiny splash chicken broth
• Spoon that melted butter over chicken repeatedly.
Remove chicken, keep warm.
3. Sauce (lighter than you think!!)
In same pan:
• 2 tbsp butter
• Garlic (30 sec)
Add:
• ½ cup chicken broth
• 1 cup heavy cream
Simmer LOW.
Now cheese:
• Add Velveeta + cream cheese slowly (small chunks)
• Stir until smooth
• THEN add mozzarella + parmesan
Don’t rush this or it’ll turn thick and weird
4. Fix the texture (THIS is the secret)
Add:
• Splashes of pasta water until sauce becomes:
smooth
silky
slightly runny (not thick like mac & cheese)
You want it to flow, not sit.
5. Toss pasta ONLY
• Add pasta into sauce
• Toss until coated
• Keep it creamy, not overloaded
6. Plate like the photo
• Pasta on one side
• Chicken on the other
• Spoon extra butter sauce from pan over chicken
• Let some sauce run onto plate
Optional:
• Light sprinkle parsley
