Lemon chicken potatoes
Keep in mind this recipe is for 2 people, and you can double it if you have more than 2 in hour household. 🙂
Ingredients:
Bag of baby yellow potatoes
1 1/2 cups of chicken broth
Minced garlic
One lemon (juice needed from lemon)
1/4 cup of olive oil
Salt and pepper
Oregano
Split your baby yellow potatoes in half and put them in a baking dish.
Drizzle about 1/4 cup of olive oil over them and seasoned with salt, pepper, and oregano.
Mince up some garlic measure that with your heart, I used about five cloves.
Add about 1 1/2 cup of chicken broth.
Cut up some lemon slices, but make sure you juice the lemon and drizzle that over the potatoes.
Preheat your oven to 400° and throw it in the oven till the potatoes are soft and fork tender. 50 minutes to an hour.
