Crispy Crusted Heirloom Tomatoes
Sweet summer heirloom tomatoes roasted until tender and topped with a buttery Parmesan panko crunch—the perfect Southern summer side.
Crispy Parmesan Panko Heirloom Tomatoes

Ingredients
* 3 large heirloom tomatoes, halved
* 2 tablespoons olive oil, divided
* 1 teaspoon kosher salt
* ½ teaspoon black pepper
* 1 teaspoon garlic powder
* 1 teaspoon Italian seasoning
* ½ cup panko breadcrumbs
* ¼ cup grated Parmesan cheese
* 2 tablespoons melted butter
* 1 tablespoon chopped fresh parsley
* 1 tablespoon chopped fresh basil (optional)
Instructions
1. Preheat oven to 425°F.
2. Slice the heirloom tomatoes in half and gently remove some of the seeds if desired.
3. Place tomatoes cut-side up on a parchment-lined baking sheet.
4. Drizzle with 1 tablespoon olive oil and season with salt, pepper, garlic powder, and Italian seasoning.
5. In a small bowl, combine the panko, Parmesan, melted butter, remaining olive oil, and parsley until evenly coated.
6. Spoon the panko mixture over each tomato, pressing lightly so it adheres.
7. Roast for 20–25 minutes, until the tomatoes are tender and the topping is golden brown.
8. If needed, broil for 1–2 minutes to crisp the topping even more.
9. Garnish with fresh basil and a little extra Parmesan before serving.
