Creamy Crab Stuffed Tomatoes
Ingredients
Crab Filling
8 oz lump crab meat
2 large heirloom tomatoes
2 celery stalks, finely diced
2 green onions, sliced
1 tbsp Dijon mustard
1–2 tbsp hot sauce (adjust to taste)
3 tbsp mayo
1 tsp lemon zest
1 tbsp fresh lemon juice
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Optional Toppings
Avocado slices
Celery leaves
Fresh dill, parsley, or chives
Fresh cracked black pepper
Drizzle of olive oil
Extra lemon wedges
Method
Wash and prepare the produce.
Slice the tops off the tomatoes and carefully scoop out the core and seeds with a spoon. Lightly season the inside with a pinch of salt and pepper, then place upside down on a paper towel while preparing the filling.
In a medium bowl, gently combine the lump crab meat, celery, green onion, Dijon mustard, hot sauce, mayo, lemon zest, lemon juice, garlic powder, salt, and black pepper. Mix carefully to keep the crab pieces intact.
Taste and adjust seasoning if needed. Add additional hot sauce or lemon juice for extra brightness.
Spoon the crab mixture into the prepared tomatoes.
Serve chilled for a fresh, crisp option, or warm the filling in a skillet over medium-low heat for 2–3 minutes before stuffing the tomatoes.
Top with avocado, fresh herbs, celery leaves, cracked pepper, or a drizzle of olive oil if desired.
Stuffed tomatoes are a fantastic way to combine fresh vegetables with flavorful fillings, making a dish that’s both visually appealing and delicious. Using ripe heirloom tomatoes enhances the natural sweetness and juiciness, perfectly balancing the creamy crab filling. In my experience, gently mixing the lump crab meat with diced celery and green onions adds a pleasant crunch and an extra layer of freshness. For those who enjoy a little heat, adjusting the hot sauce amount can customize the spice level to your taste, while the lemon zest and juice brighten the overall flavor, preventing the mayo from feeling too heavy. I also find warming the crab mixture briefly before stuffing the tomatoes gives a comforting, slightly melded taste, though serving them chilled is an excellent choice for a lighter, summery dish. Adding optional toppings like avocado slices, fresh dill, parsley, or chives not only beautifies the presentation but elevates the taste with herbal notes and creaminess. A drizzle of good-quality olive oil at the end adds richness without overpowering the delicate crab. When preparing this recipe, be careful to not overmix the crab to keep the lumps intact, which enhances the texture. Serving these stuffed tomatoes as appetizers at a dinner party or as a light lunch pairs wonderfully with a crisp white wine or a refreshing iced tea. This recipe is also quite versatile; you can swap crab for other seafood like shrimp or lobster depending on your preference or availability. Overall, creamy crab stuffed tomatoes are a crowd-pleaser that combines wholesome ingredients with simple preparation, making it a perfect dish to add to your culinary repertoire.
