Apple Oatmeal Cookies 🍎🍪

These soft and chewy oatmeal cookies are packed with apples, nuts, seeds, and fall spices. They’re perfect for a healthy snack or lunchbox treat.
Ingredients:
1 1/4 cups gluten-free rolled oats
1/4 cup almond flour
1/3 cup chopped pecans
1/4 cup pumpkin seeds
2 tbsp flax seeds
2 tbsp chia seeds
1 tsp cinnamon
1/4 tsp salt
1/2 cup maple syrup
1/3 cup tahini or almond butter
1 tsp vanilla extract
1 egg (or flax egg)
1/2 cup finely chopped apple
How to:
Preheat oven to 350°F and line a baking pan.
Mix dry and wet ingredients in separate bowls, then combine.
Fold in chopped apples.
Scoop onto baking sheet and flatten slightly.
Bake 12–14 minutes.
