Mexican recipes secret ingredient: consomé de pollo 🤭

Ingredients needed for the soup: 🥣

- 1 box Barilla Shells

- Water

- 2 tablespoons oil

- Pinch of salt

- Butter

- 4 small tomato sauce 🥫

- 1/2 spoon consomé de pollo

📝 Directions:

Put the water into a pan at a high temperature until it boils. Then pour in the shells with the oil and a pinch of salt. When the pasta is well cooked, remove the water and drain the pasta in a receptacle. In the same pan, put the butter 🧈 on medium-high temperature. When melted, add the tomato sauce and consomé de pollo. When boiling, add the pasta and stir. All done ✅ that easy.

Ingredients for Enchiladas:

- 2 chicken breasts

- Water

- Salt

- Tortillas

- Oil

- Tomatillos

- 1 onion 🧅 (half chopped)

- 1 bunch of cilantro 🌿

- 1 chile serrano

- 2 garlic cloves

- Consomé de pollo

- Sour cream

- Cotija cheese 🧀

📝 Directions:

Cook the breasts with water and salt. Once cooked, crumble and set aside. In another pan, put water to a boil and add the washed tomatillos and chile serrano until their color turns light green. Once done, remove them and put them inside the blender together with the cilantro, half of the onion, the garlic cloves, and a little water from the cooking (get rid of the remaining water). Once blended, pour the mixture into the same pan where you cooked the tomatillos. Add salt to taste and chicken broth. Boil at medium-low temperature. Once done, turn off and set aside. In another pan, add oil. While it is heating, heat the corn tortillas so that they do not break when making the tacos. Make taquitos with the tortillas and the shredded breast. Add to the oil (make sure they are not too brown); once ready, remove and drain. Once drained, they are ready to serve. Just put the green sauce on top, then the cream, the cotija cheese, and finally the chopped onion. Place the soup on the side, and that's it ☺️
