Delicious Chicken Gnocchi Soup 🥘
Three of my kids are sick from whatever viruses are going around their High School and requested one of their favorite soups Chicken Gnocchi. I figured I’d share with other fellow moms that are looking for a quick dish to satisfy their families hunger.
Ingredients:
8 cups water
8 boneless and skinless chicken thighs
1 tablespoon salt or to your taste
1/2 teaspoon black pepper
1 medium finely chopped onion
1 cup fresh shredded carrots
2 ribs celery diced
4 sprigs fresh thyme
1 tablespoon parsley
1 tablespoon minced garlic
2 cups heavy cream
2 tablespoons corn starch
2 16 oz packages gnocchi
3 cups fresh chopped spinach
1 cup shredded Parmesan cheese
Instructions:
1. In a large pot add your water, salt, and chicken thighs. Cover with lid on medium heat and allow to come to a boil.
2. After about 5-10 minutes use a fine strainer scoop to remove impurities floating at the top of your pot.
3. Add your black pepper, onions, carrots, celery, thyme, parsley, and garlic to your pot. Cover and let simmer for 30 minutes.
4. Remove chicken thighs from pot along with the stems of the thyme. Shred your chicken and set to the side.
5. Mix together the heavy cream and corn starch in a bowl and then stir into pot.
6. Add the chicken back to the pot along with the gnocchi and chopped spinach. Allow to simmer for 15 minutes.
7. Turn off the heat and stir in your Parmesan cheese and enjoy.
❤️You can always halve the recipe if you don’t have a large family. This will offer plenty of leftovers for your loved ones and is also great to freeze for another time.
