Turkey Beer Brine 🍺

Ingredients:

22 oz. brown ale or wheat beer

1/4 cup whole allspice berries

12 oz. kosher or sea salt

1 white onion, quartered

1 Tbsp. whole cloves

1 to 2 heads of garlic

1 sprig fresh sage

10 cups of water

2 lemons, sliced

2 cup ice

Detailed Steps:

In a large pot add water, salt, garlic, allspice, cloves, lemon, sage, and onion. Bring to just barely boiling and remove from heat, stirring occasionally to dissolve the salt. Add the beer and ice, stir.

Allow to cool to room temp, refrigerating if necessary. The brine must be cooled before you add your turkey or it will start to cook.

In a food-grade bucket or container large enough to hold your turkey carefully submerge turkey in the brine.

Cover and store in the refrigerator. Soak for 18 to 24 hours before smoking or roasting.

Prep Time: 10 mins.

Total Time: 18 to 24 hrs.

Yields: Turkey up to 18lbs.
