12 Days of Christmas Cookies: Day 2! 🍪
Day 2: Oatmeal Chocolate Chip with Pecans 🎅🏼🍪
If you like soft, chewy cookies then this recipe is perfect for you! Adding chopped pecans is optional but I really like the flavor they give in this recipe!
Ingredients:
1 cup AP Flour
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cup Old fashioned oats
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg, room temp.
1 1/2 tsp vanilla extract
1/2 cup chocolate chips
1/4 cup pecans, chopped *optional*
Flaky salt *optional*
- In a medium bowl, whisk flour, salt, cinnamon, baking soda, then stir in oats
- In a stand-mixer, cream butter & sugars until smooth & creamy
- Mix in egg and vanilla, scrape down sides of bowl if needed
- Slowly add in flour mixture until it’s just combined
- Add chocolate chips & pecans and mix until fully combined
- Chill dough for 30 mins before scooping
- Preheat oven to 350°F
- Line or grease a baking pan. Scoop dough into about 1 1/2-2tbsp sized dough balls. I like using a cookie scoop for this. Slightly press down each dough ball. Top with flaky salt if using
- Bake for 10-12 minutes
- Let cool for a couple minutes than transter to a wire rack to cool completely.
