Crab Cakes
These crab cakes are all about the crab, not about the cake! Having ordered and made crab cakes at restaurants throughout the years, I often found that there was way too much cake (i.e., filler!) and not enough crab. Recipe is over in the blog as usual

A good crab cake should only have enough additional ingredients to add flavor, texture, and to bind it all together. They should be flaky, have a nice brown crust, and...filled with crab! These accomplish all of those!

Crab cakes are a beloved dish in coastal cuisine, but often, many recipes fall short by overwhelming the crab with too much filler. The key to exceptional crab cakes lies in using premium crab meat and minimal binding ingredients to highlight the natural sweetness and delicate texture of the crab. When selecting crab meat, lump crab or backfin crab are preferred for their chunkier texture and superior flavor. Avoid imitations or heavily processed crab to maintain authenticity. The binding agents typically consist of ingredients like a small amount of mayonnaise, Dijon mustard, lightly beaten eggs, and panko breadcrumbs. These additions help the crab cakes hold their shape while keeping them light and flaky. Cooking technique is equally important. Pan-frying the crab cakes over medium heat allows the exterior to develop a crisp golden brown crust without drying out the interior. Using a non-stick skillet with a bit of butter or oil enhances browning and flavor. The phrase "The World's Best Pab Cakes!!!" seen in the original image text underscores the pride some have in their unique take on crab cakes, often passed down through family recipes or perfected over years of trial. For serving, crab cakes pair wonderfully with fresh lemon wedges, a tangy remoulade or tartar sauce, and simple side salads or steamed vegetables. They offer a versatile seafood main dish that can be served for casual dinners or elegant entertaining. In summary, prioritizing high-quality crab meat, minimal and flavorful binders, and careful cooking lead to crab cakes that truly deliver on the promise of "crab, not cake." These principles ensure a satisfying seafood experience that brings out the best of the ingredient, resonating well with those who seek authentic and delicious crab cakes.
