Sweet potato crust bbq chicken pizza 🍕🥔

Directions:

(Serves 2 people)

Sweet potato crust:

- preheat oven to 400 degrees F

- line a tray with parchment paper

- wrap sweet potato in foil and bake for 40-50 min until soft

- once baked, leave potato to cool and peel skin off

- mash baked potato until puréed (or puree in food processor/high power blender)

- mix eggs, almond flour, salt, garlic powder, and cornstarch until mixed together properly

- add puréed sweet potato and mix until it has the consistency of a thick batter

- spread on tray with parchment paper (should be about 1/4-1/2 inch depth; this crust is supposed to be thin crust)

- bake for 25-30 min or until top is dry

- take out of oven and brush with ~1 tsp olive oil

- place back in oven for 5-10 minutes

Bbq pizza assembly:

- take crust out of oven and top with bbq, mozzarella, chicken, red onions, cilantro, and green onion

- drizzle bbq on top

- place in oven for ~10min until cheese is melted

- serve and enjoy!

**NOTE** I used leftover chicken I baked from a previous night and shredded it. However, you can use canned chicken, or any chicken desired—BUT MAKE SURE IT IS COOKED CHICKEN! Raw chicken will not cook in the time the pizza is in the oven.
