When making cheesy tteokbokki at home, it's great to cook the rice cakes as directed, then mix them thoroughly into the spicy gochujang-based sauce before topping them with shredded cheese. I personally love using mozzarella or a blend of mozzarella and cheddar for that perfect melty texture and rich taste. After sprinkling the cheese on top, cover the pan briefly to let the cheese melt evenly, creating a creamy layer that balances the spicy sauce beautifully. Adding chopped green onions not only enhances the presentation but also adds a fresh bite to the dish. For an even more filling meal, I sometimes add fish cakes, boiled eggs, or even ramen noodles along with the rice cakes, making it a wholesome and satisfying experience.
