Vegan Eggplant Coconut CurryIngredients

Ingredients:

2 eggplants, cubed

1 onion, diced

6 cloves garlic, minced

½-inch ginger, grated

2 tbsp tomato paste

2 tbsp coconut or avocado oil

1 tbsp curry powder

1 tbsp coconut sugar

1 tsp cumin seeds

1 tsp ground coriander

1 tsp garam masala

¼ tsp chili flakes

13.5 oz full-fat coconut milk

13.5 oz water

2 tbsp cilantro, chopped

Salt to taste

Cooked rice, for serving

Directions:

Eggplant Preparation:

Heat oil in large pan

Add cubed eggplant

Sauté for 7 minutes

Remove and set aside

Aromatics Cooking:

In same pan, add onion

Add garlic and ginger

Cook until softened

Until fragrant and translucent

Spice Integration:

Return eggplant to pan

Add tomato paste and spices

Stir to combine well

Toast spices until fragrant

Curry Creation:

Pour in coconut milk

Add water and bring to boil

Reduce heat and simmer 15 minutes

Until sauce thickens and eggplant is tender

Serve & Enjoy:

Stir in fresh cilantro

Season with salt to taste

Serve over steamed rice

Best enjoyed hot
