Dairy free Potato/Ham Soup 🥣

2 Cups of Diced Potatoes

2 Cups of Diced Ham

1 Cup Diced Onions

Sauté in pot with

2 Tbsp of Olive oil

1 Tbsp of Plant Based butter 🧈

Sauté

Add desired salt, pepper

Onion powder, garlic powder & chili powder

Add 2 cups of spinach

Sauté on med/high heat

Add

1 cup of extra creamy oat milk

2 cups water or vegetable broth

Half of dairy free cream cheese for that creamy texture

Bring to boil to cook potatoes thoroughly

Add one more cup of extra creamy oat milk and half a cup of water.....let boil on medium heat.....

I first tried making this because a friend of mine has a dairy allergy, and I wanted to make sure she could enjoy a comforting dinner at my place. Turns out, it's become a family favorite even for those who can have dairy! It's genuinely an easy & delicious dinner recipe. One of the secrets to getting that rich, velvety texture without dairy is definitely the combination of extra creamy oat milk and dairy-free cream cheese. I've experimented with almond milk before, but the oat milk just gives it that perfect body. And don't skimp on the dairy-free cream cheese – it adds a lovely tang and thickness that mimics traditional cream wonderfully. If you can't find oat milk, full-fat canned coconut milk can also work, but it will give a slightly different flavor profile, so be mindful of that! Let's talk about the ham. While the recipe calls for diced ham, I often use leftover holiday ham, which saves so much time and adds incredible flavor. But don't worry if you don't have ham; this soup is incredibly versatile! I've made it with smoked turkey sausage for a different spin, and it's equally delicious. For a vegetarian option, you could swap the ham for sautéed mushrooms or even roasted chickpeas for some plant-based protein – just add them at the end. I've also found that adding a handful of chopped carrots and celery along with the onions in the sauté step adds more depth and nutrients. It really elevates it into a wholesome, easy dinner meal. When it comes to potatoes, I usually stick to Russets or Yukon Golds because they break down beautifully and contribute to the creamy texture. And don't be afraid to season!
