My original post briefly touched on making pancakes for my boy, but I wanted to dive a little deeper because this quick breakfast has been a lifesaver for us. When I say 'Pancake Brunch' or just a quick pancake for my toddler, it’s not just about the food; it's about creating a happy, nourishing start to the day without too much fuss. I've experimented quite a bit to find a pancake recipe that's both super easy for me to whip up and healthy enough for my active toddler. Here’s my go-to, no-fail recipe for fluffy, toddler-approved pancakes: My Go-To Toddler Pancake Recipe (Makes about 6-8 small pancakes): 1 cup all-purpose flour (you can also use whole wheat for extra fiber!) 1 tablespoon sugar (or a healthier alternative like maple syrup for a touch of sweetness) 1 teaspoon baking powder 1/2 teaspoon baking soda Pinch of salt 1 cup milk (dairy or non-dairy works great) 1 large egg 2 tablespoons melted unsalted butter or a neutral oil (plus extra for the pan) Instructions: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk the milk and egg. Stir in the melted butter/oil. Pour the wet ingredients into the dry ingredients and mix until just combined. Don't overmix – a few lumps are perfectly fine! Heat a lightly oiled griddle or non-stick pan over medium heat. Pour about 1/4 cup of batter per pancake.
