🧾 Ingredients:

½ yellow onion, diced

1 tbsp butter

1 tbsp oi

3 cloves garlic

6 oz fresh spinach

8 oz cream cheese

Zest of 1 lemon

Salt & pepper

1 salmon fillet

1 puff pastry sheet

Egg wash: 1 egg, 1 tbsp water, 1 tsp salt

🔪 Instructions:

1. Sauté onion in butter + oil. Add garlic, cook briefly. Add spinach until wilted.

2. Mix in cream cheese, lemon zest, salt & pepper. Let cool.

3. Roll out pastry. Brush with egg wash. Place salmon, spread spinach mix on top, wrap tightly.

4. Brush with egg wash.

5. Bake at 375°F for 3035 min (until golden, internal temp 130°F).

6. Rest 5-10 min, slice & serve.
