I took two of the best things and baked them into one pan. no regrets
soft, pillowy dough swirled with cinnamon sugar, stuffed with pockets of cookie dough, then finished with cream cheese icing spread on while still warm. it sounds like too much. it is too much. that’s the point

... Read moreIf you're a fan of combining classic flavors with a fun twist, cookie dough cinnamon rolls are a must-try treat that takes your regular cinnamon rolls to the next level. The key to success here lies in balancing the softness of the cinnamon roll dough with the rich, slightly crisp, yet gooey texture of cookie dough pockets baked inside.
One tip I found helpful when making the dough is to ensure the milk is kept between 105°F and 110°F before activating the yeast. This range provides an ideal environment for the yeast to bloom, creating a light and fluffy dough. Also, kneading the dough until it's smooth and elastic ensures a tender crumb once baked.
The filling is where magic happens—cinnamon sugar butter spread generously adds that warm spice classic to cinnamon rolls. Incorporating small pieces of cookie dough throughout the filling not only adds surprise bursts of sweetness but also enriches the texture profile. Adding chocolate chips to the cookie dough pockets intensifies the sweetness and complements the cinnamon wonderfully.
After rolling, slicing, and allowing the rolls to rise again, baking at 350°F for about 20 to 25 minutes creates cinnamon rolls with golden edges and cookie dough pockets that crisp on top while remaining soft at the center. It's important to spread the cream cheese icing immediately after baking while the rolls are still warm to help it melt and seep into every swirl, enhancing the overall flavor.
For those interested in variations, you can experiment with adding nuts like pecans or walnuts for a crunchy contrast. Moreover, incorporating flavored cream cheese icing, such as a hint of maple or orange zest, can elevate the rolls for special occasions.
Lastly, these cookie dough cinnamon rolls are a crowd-pleaser at brunches, holiday breakfasts, or even as a decadent dessert. Preparing them from scratch may be a bit time-consuming but the reward is well worth it—every bite delivers a delightful combination of soft pastry and sweet cookie goodness. Give this recipe a try and enjoy a baked treat that truly doubles down on indulgence.
